Pedro's Cocina Burrito Offering Not a 'Rey' of Sunshine

The Burrito Blotter took an inaugural visit to Pedro's Mexican Cocina on Sweetwater Spring Boulevard.

Since I've been doing , I've typically stuck to smaller taco shops to review. But while driving around Spring Valley the other day, a larger sit-down Mexican restaurant seemed to beckon to me: Pedro's Mexican Cocina on Sweetwater Springs Boulevard.

It's tucked away in the corner of a shopping plaza, which usually has only a few cars in the lot. So I decided to pop in and see what burritos they had to offer. I was drawn to the Rey Burrito ($10.95), which the menu said consisted of shrimp, carne asada, sour cream and guacamole.

As always, we'll break it down:

Tortilla
The tortilla, sadly, was a little crispy and dry. Not all of it, mind you, but definitely dry in enough places to throw off the overall texture a bit. It also made the tortilla truly being able to "wrap" around the ingredients prove difficult.

Shrimp
The shrimp were very large and plump. Bonus. However, they were also tough and somewhat rubbery. Bonus rescinded. The amount of shrimp in the burrito must have been fine, as my notes indicate that there were not too few of them.

Carne Asada
The carne itself had a very nice flavor. Salty and a bit tangy. However, it too was overcooked and tough. The texture was just off, as I found myself having to labor a bit to fully chew it all up.

Sour Cream
For the first half of the burrito, I wasn't even aware that sour cream was present. It finally appeared in a few bites in the middle, and was prominent in each bite thereafter. Provided a nice little "sauce" as it combined with the juice from the proteins. But a better distribution of sour cream could have helped.

Guacamole
Much like the sour cream, I didn't find any guacamole in the first half of the burrito. But unlike the sour cream, it was nowhere to be found in the bottom half as well. I'm not sure if this was a typo in the menu, a case of simply forgetting to put it on, or if it was so minimally added that I couldn't taste it, but the bottom line is – I couldn't taste it.

Beans and Rice (bonus side ingredient)
The beans and rice on the side was the element that I actually enjoyed the most on this plate. They were very tasty and perfectly cooked. I actually added it to several bites of the actual burrito, and it improved the quality dramatically. Well done on that aspect.

Overall
I'm not willing to write off Pedro's as a future potential destination for a burrito place, as some flavors were actually there. But the execution of this particular offering was a little subpar. We'll have to see what other options are available if and when The Burrito Blotter returns.
